Terrine - A Layered 3 Cheese Spread
8 oz. Gouda coarsely grated
¼ cup fresh basil chopped
3 tbl. milk
8 oz cream cheese, softened
1 cup walnuts, toasted & chopped
¼ tsp black pepper
8 oz sharp cheddar, coarsely grated
¼ cup sesame seeds toasted
½ tsp paprika
Line a loaf pan with plastic wrap. Process the Gouda, basil, and 2 tbl milk until smooth. Spread in an even layer in the loaf pan. In a bowl mix the cream cheese, walnuts, and pepper until smooth. Spread in an even layer over the Gouda layer. Process the cheddar, sesame seeds, paprika, and 1 tbl milk until smooth. Spread in an even layer over the cream cheese layer. Cover & refrigerate until firm (overnight). Use the plastic as a lever in order to unmold.The top can be garnished with walnuts and/or basil sprigs.
