Pre-heat the grill with the burner providing heat on one side only with a pan over the coals and the grill itself over the unheated part. Soak the hickory, mesquite, or apple wood chips in a bucket of water. Trim two 9 lb picnic porks. Remove all surface fat and especially the rubber like pig skin. Put the two on the grill at 9am and slather with the Butcher's BBQ sauce Turn the pork and baste every 20 minutes. About 6 hours of grilling hours should do it. When the pork is done pull all the meat off the bone and keep in a warming oven.Remove the smoker pan, replace the missing grill, and use the grill brush. | |
