| Daddy-O's Tomato Caper Relish | |

1) Empty 1 28oz can of diced tomatos into a food processor and pule to a course puree. 2) Combine 3/4 cup brown sugar and 2 cups cider vinegar in a saucepan.Bring to a boil until sugar melts. 3) Add the tomatos, 1 tbs fine minced garlic, 1 tbs fine minced ginger, 1 1/2 tbs chili powder, 2 tsp mustard seeds, 1 tsp ground cumin, 1 tsp ground coriander, 1/2 tsp paprika, 1/8 tsp allspice, 1/8 tsp ground cloves, salt and pepper to taste. 4) Bring to a simmer and cook, stirring occasionally, for 45 minutes to an hour until it thickens. 5) Cool and stir in 1 tbs capers. Refrigerate. | |
