| Greek Macaroni Bake | |

¾ lb ground beef or turkey ½ cup chopped onion 1 6oz can of tomato paste ½ tsp salt ½ tsp ground cinnamon ½ cup mayonnaise |
¼ cup flour 2 cups milk 2 eggs ½ cup grated Parmesan cheese ½ tsp ground nutmeg 8 oz elbow macaroni cooked & drained |
| Brown meat and onion, draining any fat. Stir in the tomato paste, salt, and cinnamon. In a saucepan mix the mayo and flour. Gradually stir in the milk. Cook and stir over medium heat until thick. Do not boil. Beat together the eggs, cheese, and nutmeg. Gradually stir into the sauce. Add the macaroni to the sauce. Spoon half the macaroni mix in a 2 qt baking dish. Cover with the meat mixture. Top with the remaining macaroni. Bake in a 325ºF oven for 45 minutes, or until set. | |
