Baked Pork With Apples & Caraway
1 large onion thinly sliced
3 Rome apples (or mac or green) peeled, cored, and sliced
1 tbs honey
1 tbs caraway seeds
8 trimmed 1" thick pork chops
salt, pepper, dijon mustard
Up to ½ cup water
In a large baking dish scatter the onion over the bottom. Cover evenly with the sliced apples. Dribble the honey over the apples then sprinkle half the caraway. Season the chops with salt and pepper and then spread both sides of the chops with mustard. Layer the pork over the apples in a single layer if possible. Sprinkle the rest of the caraway over the top. Bake uncovered at 350 degrees for one hour. Add some water to the pan after 30 minutes if liquid hasn't accumulated.

Move the pork chops to a serving platter. The apples should be mushy so mix them well with the onions, making a sort of sweet side dish. Serve the pork with the onion mix over flat noodles.

I personally like more honey and gobs more mustard and at least twice as much caraway. A big vidalia onion just makes everything sweeter.
