Chicken Tetrazzini - Serves 6
2 cups cooked, diced chicken
2 Tbs butter
4 cloves minced garlic
3 Tbs flour
1/2 cup slivered almonds
2 cups sliced mushrooms
2 cups broth
2 Tbs white wine
1/3 cup grated parmesan
1 cup milk
1/3 cup chopped fresh parsley
Melt butter in saucepan; add minced garlic and mushrooms;saute until garlic is lightly browned; Add almonds and saute briefly; Stir in flour; gradually add broth, stirring constantly until thickened; add white wine and cheese; gradually add milk; simmer until thick; stir in parsley, chicken, and salt/pepper to taste;. heat through but Do Not Boil; serve over linguini or fetuccini.
