Pacific Rim Stir-Fry
a) Stir-Fry 2 medium carrots cut into julienne strips for 1 minute. Add 2 cups broccoli florets. Stir-fry for 2 minutes more, Add 1 red or green pepper cut into 1" strips, Stir-fry 2 minutes. Remove all the vegetables to a dish.
b) Cut 12 oz chicken into thin strips. Stir-fry 3 minutes or untill it is no longer pink. Push the chicken from the center of the wok.
c) In a bowl mix ½ cup chicken broth, 2 tbl soy sauce, 2 tsp dried basil,2 tsp corn starch, ½ tsp crushed red pepper, ½ tsp turmeric. Add to the center of the wok. Cook and stir until bubbly. Move chicken into the sauce and add the vegetables. Stir to coat. Cook 2 minutes or until heated through.
d) Serve immediately over rice.
