Crab or Shrimp Pilaf - Serves 6
1 medium chopped onion
1 can diced tomatos
3 stalks of celery finely diced
2 4oz cans of shrimp or crab
3 cups cooked rice
6 eggs
½ tsp salt
½tsp paprika
1 crumbled bay leaf
¼ cup parmesan cheese
Saute celery and onions until tender crisp. Add tomatos, salt, paprika, bay leaf, and cheese. Heat until cheese is melted. Fold in the rice and the seafood. Top with some flavored breadcrumbs and a sprinkle of paprika for color. Pour into a greased casserole and bake at 325 degrees for 25 minutes.
