| Tomato Shrimp Scampi - Serves 4 | |
| 8 ounces pasta 1/4 cup olive oil 4 cloves minced garlic 2 cups chopped plum tomatos 1/2 cup white wine 1/2 cup lemon juice | 1/2 tsp sugar 4 chopped scallions 1 lb. shrimp (peeled, deveined, rinsed, patted dry) 4 tbs dried basil 4 tbs Parmesan cheese |
| Saute garlic in olive oil in a large skillet over medium heat for 2 minutes. Add tomatos and cook 5 minutes. Add wine, lemon juice, and sugar. Simmer 6 minutes. Add scallions and shrimp. Cook until shrimp turn pink and are cooked through, about 3 minutes. Stir in basil and Parmesan cheese. Toss with cooked pasta and serve immediately. | |
