Tuna Florentine
2 10oz pkg frozen chopped spinach
¼ cup butter
¼ cup flour
¼ tsp pepper
¼ tsp dry mustard
2 cups milk
½ cup mayonnaise
1 tbs lemon juice
2 cans solid white tuna
3 cups cooked rice
Cook spinach and drain well. Melt butter in saucepan over low heat, blend in flour, mayo, and seasonings.Add milk and cook, stirring constantly until the mixture comes to a boil and thickens. Cook 1 minute. Add lemon juice and spinach. Stir well. Mix the drained tuna, finely flaked, with the rice. Spread the rice/tuna mix in a baking dish and top with the spinach sauce. Bake 30 minutes at 350 degrees..
