| 2 10oz pkg frozen chopped spinach ¼ cup butter ¼ cup flour ¼ tsp pepper ¼ tsp dry mustard |
2 cups milk ½ cup mayonnaise 1 tbs lemon juice 2 cans solid white tuna 3 cups cooked rice |
| Cook spinach and drain well. Melt butter in saucepan over low heat, blend in flour, mayo, and seasonings.Add milk and cook, stirring constantly until the mixture comes to a boil and thickens. Cook 1 minute. Add lemon juice and spinach. Stir well. Mix the drained tuna, finely flaked, with the rice. Spread the rice/tuna mix in a baking dish and top with the spinach sauce. Bake 30 minutes at 350 degrees.. | |
