Avanell's Carrots
a) Melt 2 tbl butter in a saucepan, add 1 finely chopped small onion or shallot, 1 lb very thinly sliced pared carrots (Easy with a Mandoline. I've even used canned carrots in a pinch and it still works)

b) Add 1 tbl brown sugar and ½ tsp dried thyme.

c) Cover and simmer until carrots are tender (about 15 minutes)
